Biscuits

I finally did it! I made biscuits that we like!! It has been quite a quest. I've tried many, many recipes over the last year, including the one from Better Homes and Garden, Alton Brown's, Paula Dean's, Farm Mom's, and even the one on the back of the bag of self-rising flour. I've had varying success, some were edible, some not. But none were what we were looking for. We were looking for light, flaky biscuits, like the Pillsbury Grands biscuits. What I was making were denser, like the ones you get at Cracker Barrel. Maybe that is how southern biscuits are?

Anyway, I find a recipe that said it made flaky biscuits, so I tried it this morning and it worked! Here is the recipe: http://blog.kitchenmage.com/2008/01/simple-flaky-bi.html

Now I can be a real farm mom and wife. One can't be a real farm women if they can't make good biscuits. I'm excited. I've mastered a whole wheat sandwich bread we all like and now biscuits. Look out world.

But ya know, if you really want to call yourself a real farm mom, you've got to have a super size big old farm table....so that you can invite all your friends to enjoy those yummy recipes you're making (hint-hint)

My grandma's biscuits were always really heavy and dense. Having grown up on the biscuit tin biscuits from the grocery, I never really appreciated her bicuits. I think it is a "southern" thing.

I found a recipe for a "cream biscuit." It uses butter instead of shortening and cream instead of water or milk. They're actually pretty good - very buttery and flaky. And I often use the same recipe for pie crust and dumplings :).

In my family, I can no longer use grocery store biscuits or pie crust. I've mastered them both and the others are considered 'fake'. Congrats on finding a great recipe and making it work for you!

Lisa - You're right! I don't have a super size table. I'll have to get on that, I want to make sure there is room for all of you.

Wendy - that is very similar to the recipe I used. It used butter and milk.

I was thinking of changing the name after we finally move. You stole my thunder LOL.

The dense biscuits must be a southern thing because that's how I like them.

Of course, if you want to make them the yummiest, you need to grease the pan with bacon grease. Then you drag the top of the buiscuit through the grease before putting it in the pan. That way you have both the top and bottom seasoned with bacon grease.

Oh, and you MUST have a coffee can of bacon grease sitting on your stove to qualify.

(If you don't have the can of bacon grease, what to do you cook your biscuits in? What do you cook your eggs in? What do you dribble on salad? What do you use to tempt the old dog into eating her supper? LOL!)

I do have a jar of bacon grease, but I keep it in my fridge. I haven't come up with quite as many uses for it as you have. But it is the key to good cornbread.
